*** Italian dressing in the meat cooler with stored below beef. The plastic had drippings from the meat product. *** COS Dressing was removed and thrown away by PIC. He said that it was likely that the waitstaff had put it there by accident. It was not supposed to be stored there. Dressing is Ready to Eat food. It needs to be stored away from or above animal products to prevent cross contamination. - 3-302.11 (A) (2): (A) FOOD shall be protected from cross contamination by: (2) Except when combined as ingredients, separating types of raw animal FOODS from each other such as beef, FISH, lamb, pork, and POULTRY during storage, preparation, holding, and display by: (a) Using separate EQUIPMENT for each type, or (b) Arranging each type of FOOD in EQUIPMENT so that cross contamination of one type with another is prevented, and (c) Preparing each type of FOOD at different times or in separate areas. - V,COS |

*** Found vegetable medley labeled 9/6, reduction with 8/31, pesto with 9/5t, and cav sauce with 9/5. *** COS PIC threw out all TCS (time temperature control) food beyond the maximum holding time of 7 days. PIC said he had been gone for a few days, and he had not been there to throw out the food at the proper time. - 3-501.17 (A-B) (E-G): (A)Except when PACKAGING FOOD using a REDUCED OXYGEN PACKAGING method as specified under § 3-502.12, and except as specified in ¶¶ (E) and (F) of this section, refrigerated, READY-TO -EAT, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD prepared and held in a FOOD ESTABLISHMENT for more than 24 hours shall be clearly marked to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded when held at a temperature of 5ºC (41ºF) or less for a maximum of 7 days. The day of preparation shall be counted as Day 1. (B) Except as specified in ¶¶ (E) - (G) of this section, refrigerated, READY-TO-EAT TIME/TEMPERATURE CONTROL FOR SAFETY FOOD prepared and PACKAGED by a FOOD PROCESSING PLANT shall be clearly marked, at the time the original container is opened in a FOOD ESTABLISHMENT and if the FOOD is held for more than 24 hours, to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded, based on the temperature and time combinations specified in ¶ (A) of this section and: (1) The day the original container is opened in the FOOD ESTABLISHMENT shall be counted as Day 1; and (2) The day or date marked by the FOOD ESTABLISHMENT may not exceed a manufacturer’s use-by date if the manufacturer determined the use-by date based on FOOD safety. Inspection Comments |
-Found unlabeled piece of cake in a beverage cooler. PIC said it was likely food an employee intended to take home, but threw it away as it was unlabeled. I informed him that employees are allowed to use their coolers for personal items as long as they are labeled. -Cool down is still being completed in shallow pans with ice in small portions. -Cool down logs are being kept for all crimp/seal food, and all food is being cooled down within the correct time parameters. -All reheat is logged correctly. -Facility is doing a very good job following their HACCP plan. |
